Zucchini Chips

I had some zucchini in the fridge and I really NEEDED something chip-like.


Here's where some really good zucchini chips come in handy! (Sorry, I have no pictures, these did not hang around very long.) I made a batch for myself and then another for the kids and I the next morning. Even my anti-zucchini child, ate seconds of the really crispy ones.


Zucchini Chips

Ingredients:

Italian dressing
bread crumbs
1 zucchini
grated parmesan cheese and garlic powder

Directions:

Preheat oven to 450 degrees

1. Slice zucchini really thin.
2. Marinate in Italian dressing for an hour or so.
3. Dip the zucchini into the bread crumbs until coated and place on a greased cookie sheet.
4. Sprinkle with parmesan cheese and garlic powder.

Bake for 25-30 minutes until they are nice and crispy!
