I love adding fruits and veggies into recipes that the kids love. Pancakes are no different!
This recipe is slightly adapted from one I found on allrecipes. com
1 1/2 cups milk
1 cup pumpkin
1 egg
2 Tbsp. vegetable oil
2 Tbsp. vinegar
2 cups all purpose flour
3 Tbsp. brown sugar
2 tsp. baking powder
1 tsp. baking soda
2 tsp. pumpkin pie spice
1/4 tsp. ground ginger
1/2 tsp. salt
Mix together milk, pumpkin, egg, oil and vinegar. Combine rest of ingredients separately, then combine with pumpkin mixture. Heat your griddle or pan on medium high. Using 1/4 cup measuring cup, pour batter onto griddle. Brown both sides.
