I've been experimenting with lots of bread recipes lately and decided to have a 30 Days of Bread series. I even made that little button on the side and I know it's not that impressive...but for me it took a lot to come up with that.
Most of these recipes came from other recipe sites or pinterest, so I will link up to the original post or recipe when possible. Some have been great, some have been flops, and some I've made more times than I can count. I hope you enjoy this series and make some bread of your own! This is an awesome pumpkin bread! I've made it several times and have gotten raves every time. It's not the healthiest, but it's really good.
Pumpkin Cranberry Bread
2 eggs
2 cups sugar
1 cup canned pumpkin
1/2 cup vegetable oil
2 1/4 cups all-purpose flour
1 tsp. baking soda
1 Tbsp. pumpkin pie spice
1/2 tsp. salt
1 cup fresh or frozen cranberries chopped
Beat eggs and sugar. Add pumpkin and oil, mix together well. Add dry ingredients, stir until moist. Fold or stir in cranberries. Spoon into 2 greased 9 1/2 inch loaf pans. Bake at 350 degrees for 50-55 minutes or until done. Cool in pan for 10 minutes and then finish cooling on wire racks.
