Soup

Barley and Lentil Soup

8 cups beef broth
2 cloves garlic (I usually double or triple this- we love garlic)
1 tsp. dried oregano leaves, crushed
3 cups carrots
1 cup celery (or you could substitute onion)
1/2 cup dried lentils
1/2 cup uncooked barley

Stir everything into a large crockpot.

Cook on low 8 to 9 hours (high 4 to 5 hours) or until beans are tender.



Mixed Bean Stew with Sausage

3/4 pound sweet Italian sausage (casings removed) (I substituted mild Mexican chorizo)
10 cups chicken broth
1/4 tsp. black pepper
2/3 cups carrots
1 cup celery
3/4 cup each pinto, navy and kidney beans
1 can diced tomatoes
 fresh parsley (optional)

Cook sausage and break into small pieces. Drain and put into a large crockpot. Add the other ingredients. Cook on low 7 to 8 hours (high 4 to 4 1/2 hours) or until the beans are tender.
