Brownies

I've been needing a chocolate fix lately so we've been having more desserts than usual.  Here's a brownie recipe that we all really like.  Since Thursday was theme night and National Chocolate Day, what better excuse to make some brownies and watch Willie Wonka and the Chocolate Factory. 

Brownies

3/4 cup flour
1/2 tsp. baking powder
3/4 tsp. salt
1 c. sugar
2 eggs
1/3 c. oil
2 squares baking chocolate melted (I use semi-sweet)
1 tsp. vanilla
1/2 c. nuts (I always omit because of our son's tree nut allergy)

Sift flour, salt and baking powder together.  Beat the eggs and sugar in thirds, beating well after each addition.  Add the melted chocolate, oil and vanilla to egg/sugar mixture and beat well.  Then add all to the flour mixture and nuts.  Mix well.  Bake in an 8 x 8 pan 350 degrees for 35 minutes.  (I use an 8.5 x 11 pan and it still turns out fine)
