Squash and S'mores

This is the first pick of zucchini...since this picture was taken 2 days ago, they have multiplied on my counter. I tried a new zuckamole recipe (zucchini guacamole). I had my old recipe and lost it this week. I hope it turns up because I can't find it online anywhere. I made this one from the raw project. It turned out more like a salsa. My husband tried some at lunch and loved it. He didn't like my other recipe as well. Since typing this I found my recipe online...YAY! Here is a zuck-a-mole recipe I really like and my friend who is a vegetarian likes it too.

Here are some more zucchini recipes...I will have probably 30-40 yellow crookneck all at the same time. My zucchini are the tortoises this year...a few at a time but big. I'm spending some time cooking this afternoon before the next big wave comes in.

S'mores Crumb Bar Dessert

3 cups graham cracker crumbs
3/4 cup butter, melted
1/3 cup sugar
3 cups miniature marshmallows
2 cups (12 ounces) semisweet chocolate chips


In a small bowl, combine the crumbs, butter and sugar; press half into a greased 13-in. x 9-in. baking pan. Sprinkle with marshmallows and chocolate chips. Top with remaining crumb mixture; press firmly.



Bake at 375° for 10 minutes. Remove to a wire rack; immediately press top firmly with spatula. Cool completely. Cut into bars. Yield: 3 dozen
